Yes, you read that right…Guinness CAKE!!
I have one happy husband right now. He hinted to me this past week that he wanted me to try and make this for him, so I did. The cake preparation is easy and affordable. I used an already made frosting instead of making one from scratch. I would say that this recipe is a success!
Chocolatey Guinness Cake
- 1 cup of Guinness
- 1/2 cup butter cut into small pieces
- 2 cups sugar or Splenda Mix
- 3/4 cup baking cocoa
- 2 eggs, beaten
- 2/3 cup of sour cream
- 3 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1-1/2 teaspoons baking soda
Preheat oven to 350 degrees.
Grease a 9-inch Springform pan and line with parchment paper. Make sure to cut it into a circle to fit the pan. (I did not have a 9-inch Springform pan, so I used an 8×8 rectangular, glass, pyrex dish. Even though I used a glass pyrex dish, I still used parchment paper.)
In a large pot, add 1/2 cup of butter and 1 cup of beer. Simmer until the butter melts. ***Keep an eye on it, you do not want it to burn.
Once the butter has melted, take the pan off of heat.
Add 2 cups of sugar and 3/4 cup of baking cocoa and to the butter/Guinness mixture.
Add beaten eggs, sour cream, and vanilla to butter/Guinness mixture.
Combine flour and baking soda into butter/Guinness mixture until smooth.
Pour cake batter into pan.
If you use a 9-inch Springform pan, bake for 50 minutes. If you use an 8×8, rectangular dish, you will need to bake for 60-65 minutes.
Let cool and ice with a cream cheese frosting.
