These are not your ordinary cupcakes. If you look closely you will see a layer of cake, ice cream, and whipped cream icing! I am so thrilled someone thought of this!
I don’t know about you, but this particular cupcake screams St. Patrick’s Day party dessert. The creator of this awesome cupcake added Bailey’s Irish coffee creamer to both the cake and ice cream. There is also a yummy bonus in the ice cream and topping: Heath Toffee Candy.
***If you are not a big fan of Bailey’s but want to serve up this creative dessert, try replacing the ice cream with mint chocolate chip. You can just buy it at the store already prepared. If you go this route, you may want to change the icing to chocolate. Here is a recipe for Chocolate Whipped Cream Frosting. You will have to convert the grams to cups.
