This lasagna recipe is easily my favorite Keto meal! I make it several times a month and I still have not gotten tired of it! If you are like me and really miss the taste of lasagna, this may help satisfy your taste buds.
- 1 lb of hamburger meat
- 1 cup of chopped onions
- 1 tbsp of minced garlic
- 1 tsp garlic powder
- 1tsp of Italian seasoning
- 1 tsp salt
- 1 tsp pepper
- Grated Parmesan (sprinkled)
- 2- 14 oz. jars of Rinaldi Pizza Sauce
- 1 egg
- 1 cup of grated mozzarella cheese
- 1 cup of ricotta cheese
- 1 tsp of parsley flakes
- Mozzarella cheese
- Parsley flakes
- Grated Parmesan cheese
In a large pan, you will want to start to brown your hamburger meat. As you are cooking it, add the chopped onions, minced garlic, garlic powder, Italian seasoning, salt and pepper. Cook and drain.
Next, add the pizza sauce and let the meat mixture simmer for about 5 min. I found the pizza sauce at Dollar Tree. This is so much cheaper than spending almost $8 on an approved sauce!
In a small bowl, mix together your egg, mozzarella cheese, ricotta cheese and parsley flakes.
For the Mozzarella cheese, make sure to avoid using pre-shredded cheese. The pre-shredded cheese contains potato and corn starch. Those are big no-no’s on the Keto diet. If you take a look at the block cheese, the ingredients only contain pasteurized part-skim milk, cheese culture, salt and enzymes. This is a way better choice!
I chose to use a small baking dish. If you can get your hands on a polish pottery casserole dish, I highly recommend them! The food tastes better and the clean up is so easy! My dish measures 10×7 . You can use an 8×8 dish, if you have one.
For the first layer, use half of the meat sauce and cover the bottom of your dish. Next, add half of your cheese mixture and spread it out as much as you can. Now, pour the remaining meat into the dish and spread out the rest of your cheese mixture on top of that. For the finishing touch, sprinkle mozzarella, parsley and parmesan on top and pop it in the oven.
Bake at 350 degrees for 35 min. I did 35 minutes with my dish and it was heated all the way through. My dish is 6.5 inches deep. You will have to play around with the time to find out exactly when you should remove it from the oven. The shallower the dish, the less time in the oven!
Let sit for about 5 minutes and then serve. This is not going to come out of the dish pretty at all, so be prepared for that!
