Preheat oven to 375 degrees.
Season with kosher salt and pepper. In a food processor, add bread crumbs, sun-dried tomatoes, and garlic. Pulse bread crumb mixture for about 2 min.
Grab three shallow dishes. Transfer bread crumb mixture into first shallow dish. Pour flour into second dish. In the third dish, combine eggs and water. Use a fork to mix up eggs and water.
Dip each chicken breast in each shallow dish starting with the flour, then egg mixture, and finally the bread crumbs. Make sure the bread crumbs cover both sides.
